Creamy Broccoli Potato Soup

This creamy soup tastes richer than it is. It comes out creamy and rich tasting without the use of cream.
Ingredients:
10 oz. package frozen broccoli or one good sized head fresh broccoli
4 medium red or yukon gold potatoes, cut in 1-inch dice
1 medium onion, chopped
1/2 stick of butter
4 cups chicken or vegetable broth
salt and pepper
fresh or dried herbs (parsley, rosemary, thyme)
Directions:
1. Melt butter in a large saucepan over low-to-medium heat. Saute onion gently till transparent.
2. Add the broth, potatoes, broccoli, salt and pepper and herbs. Simmer until potatoes and broccoli are very tender.
3. Let soup cool enough to work with.
4. Put soup in a blender or use a stick blender to puree until smooth.
5. Reheat soup gently as needed.
6. Ladle into bowls. Sprinkle with herbs for garnish if desired.
