Creamy Broccoli and Ham Soup With Cheese |

I saw a recipe in a magazine and thought to myself, I can do better than this”. So here's what I came up with. It will be I think more like a cream soup, so if you want it more soupy add a little more chicken broth. Ingredients:
1 (16 ounce) bag frozen broccoli, thawed |
1/2 cup chopped sweet onion |
1/2 cup uncooked instant rice |
2 1/2 teaspoons italian salad dressing |
3/4 cup chopped cooked ham |
1 cup milk |
2 cups shredded cheddar cheese |
2 1/2 cups chicken broth |
1 cup water |
salt and pepper |
Directions:
1. Cook onion in dressing in a large saucepan until tender. 2. Add broth, water, and broccoli. 3. Bring to a boil 8 to 10 minutes or until broccoli is tender. 4. Stir in milk and rice. 5. Reduce heat to medium. 6. Cook 5 minutes. 7. Pour into a blender container in small batches. 8. Blend until smooth. 9. Return to saucepan. 10. Add ham; stir until ham is heated through. 11. Top each serving with 1/3 cup cheese. 12. Serve with croutons if desired. |
