Another traditional accompaniment to Christmas dinner here in Ireland. This year is the first time I've made it. (I made it three times actually!) Ingredients:
600ml (1 pint) milk |
12 tbsp fresh white breadcrumbs |
1 small onion |
nutmeg |
25g (1oz) butter |
3 tbsp cream |
salt and white pepper to taste |
Directions:
1. Place the milk in a saucepan and bring to the boil. 2. Add onion, nutmeg and the butter. 3. Simmer for 15 minutes. 4. Remove the onion and discard. 5. Pour the milk over the breadcrumbs and return to the heat stirring until the sauce thickens, adding the cream. 6. Serve. |
