A tasty no oil-no sugar salad dressing from Joel Fuhrman's The End of Diabetes. Delicious served over a green salad. Ingredients:
2 cups frozen blueberries (thawed) or 2 cups fresh blueberries |
1/2 cup pomegranate juice |
1/3 cup raw cashews |
6 walnut halves |
2 tablespoons wild blueberry vinegar or 2 tablespoons white wine vinegar |
Directions:
1. Combine all ingredients in high-powered blender or food processor and blend until smooth and creamy. |
