This is an easy recipe but one that looks and tastes like you slaved for days. I bring this to the office at least once a month and am always asked for the recipe. It is so good I can't tell you how much we enjoy it and devour it. Read more . Hope you enjoy it as much as we do. Ingredients:
1 cup plus 2 teaspoons butter softened divided |
1-3/4 cup granulated sugar divided |
3 eggs |
3-1/4 cup all-purpose flour divided |
2 teaspoons baking powder |
1 teaspoon vanilla extract |
1 can blueberry pie filling |
1 teaspoon ground cinnamon |
Directions:
1. Preheat the oven to 350. 2. Coat a rectangular baking dish with nonstick cooking spray. 3. In a large bowl cream together 1 cup of the butter and 1-1/2 cups of the sugar. 4. Add eggs one at a time. 5. Add 3 cups of the flour, baking powder and vanilla and mix well. 6. Spread half the batter in the baking dish then using a wet knife spread the pie filling even over batter then dollop remaining batter over pie filling and spread with a wet knife almost covering the pie filling. 7. In a small bowl mix together with a fork the remaining flour, sugar and butter then stir in cinnamon until crumbly. 8. Sprinkle over the batter and bake 1 hour. 9. Cool in the baking dish on a wire cooling rack then cut and serve. |
