Creamy Blue Stuffed Mushrooms |

Love these mushrooms. And so versatile...I have been known to throw in bacon or ham, too. Ingredients:
2 pounds medium mushrooms |
8 tablespoons butter, softened |
1 8 ounce package cream cheese, softened |
1/2 cup crumbled blue cheese |
1 tablespoon worcestershire |
2 tablespoons chopped onion |
1 tablespoon minced garlic |
3-4 oz chopped fresh or frozen spinach |
Directions:
1. Remove mushroom stems; chop enough stems to measure 1/2 cup. 2. Saute stems, onions, garlic, and spinach in 2 T butter and worcestershire until onions are translucent (6-8 miutes) 3. Drain well, place in mixing bowl and set aside 4. Cook half of mushroom caps in 3 tablespoons butter over medium heat 5 minutes; drain. 5. Repeat with remaining mushroom caps and butter. 6. Add cheeses to mixture in mixing bowl and mix well 7. Place on baking sheet; broil until golden brown. |
