This can be used as a first course, a main dish or a side dish. Ingredients:
1 pound spaghetti, cooked, drained and kept warm |
4 tablespoons butter |
1/2 cup (3 ounces) blue cheese, crumbled |
3/4 cup chicken stock or broth |
1 1/2 cups fresh mushrooms, thinly sliced |
3/4 cup green onion (or to taste), thinly sliced |
2 tablespoons lemon juice |
1/2 teaspoon salt |
1/4 teaspoon ground black pepper |
1/4 cup parmesan cheese, grated |
Directions:
1. In large skillet, melt butter over medium heat. 2. Add blue cheese and chicken stock or broth. 3. Cook, stirring, until cheese is melted and mixture is thickened. 4. Add mushrooms, green onion, lemon juice, salt and pepper. 5. Simmer 5 minutes or until mushrooms are softened. 6. Toss with hot cooked spaghetti and arrange on serving platter. 7. Sprinkle with Parmesan cheese. |
