This is a very simple bean-based salsa. It is light and zesty and filled with veggies. I love to serve it at picnics in the summer but I get requests for it all year round. I hope you like it as much as my family does! Ingredients:
1 (15 ounce) can black beans, rinsed |
1 (8 3/4 ounce) box frozen corn kernels, thawed |
1 cup red bell pepper, finely chopped |
3/4 cup green bell pepper, finely chopped |
1/2 cup red onion, finely chopped |
2 tablespoons dried parsley |
1/2 cup sour cream |
1/4 cup mayonnaise |
2 tablespoons red wine vinegar |
1 teaspoon chili powder |
1 teaspoon cumin |
1/2 teaspoon salt |
1/4 teaspoon garlic powder |
1/8 teaspoon pepper |
Directions:
1. In a large bowl, mix the salsa ingredients together. 2. In a separate bowl mix the sauce ingredients together to make the sauce. 3. Pour the sauce over the bean combination. 4. Mix thoroughly. 5. Refrigerate for a couple of hours. 6. Serve with tortilla chips. 7. ENJOY! |
