This wonderful soup is enjoyed by potato lovers around the world. Ingredients:
1 oz of bacon (about 4 slices) |
3 tablespoons butter |
2 tablespoons all-purpose flour |
2 cups milk |
1 small potato |
1 green onions, chopped |
1/3 cup shredded cheddar cheese |
1/4 cup plain yogurt |
1/8 teaspoon salt |
1/4 teaspoon ground black pepper |
Directions:
1. Place bacon in a large, deep skillet. Cook over medium heat until browned. Drain, crumble, and set aside. 2. Melt the butter over medium heat. Whisk in flour and 2% milk, stir constantly until it thickens. 3. Add potatoes and onions bringing to a boil, stir constantly. 4. Simmer 10 minutes and then add bacon, cheese, yogurt, salt, and pepper.Stir frequently. 5. Once cheese is melted remove from heat, serve and garnish with cheese and chives. |
