3 tablespoons olive oil |
3 lbs pork (cubed) |
3 tablespoons olive oil |
3 tablespoons butter |
7 cups onions (sliced thin) |
6 tablespoons flour |
3 cups evaporated milk |
salt & fresh ground pepper (to taste) |
2 cups swiss cheese (grated) |
1 cup fresh dry whole wheat breadcrumbs |
1/4 cup butter (chopped) |
Directions:
1. Heat oven 400. 2. Heat oil in a skillet. Brown pork in batches. 3. Remove all to a plate. Season. 4. To skillet add the oil and butter. 5. Add onions. Saute 15 minutes. 6. Stir in flour. Cook 1 minute. 7. Stir in milk. Bring to a boil. Reduce. Simmer 15 minutes. Season. 8. Remove from heat. Layer onion mix, pork and cheese in a sprayed 9x13. 9. Top with crumbs. Dot with butter. 10. Bake 20 minutes. |
