Creamy Baked Mashed Potatoes |

True comfort food to warm you inside and compliment your favorite meat dish! Ingredients:
2 1/2 lbs russet potatoes, peeled and cut into chunks |
1 1/4 cups whole milk |
1 cup grated cheddar cheese or 1 cup swiss cheese |
1 envelope knorr vegetable soup mix |
1/2 cup sliced green onion |
1 egg, beaten |
Directions:
1. Preheat oven to 350°F. 2. In a large saucepan, cover potatoes with cold, lightly salted water. 3. Set heat to medium and bring potatoes to a boil. 4. Cook uncovered, stirring occasionally until fork tender{approximately 20 minutes}. 5. Drain and mash potatoes using potato masher. 6. In a large bowl, beat the milk into the mashed potatoes. 7. Stir in 3/4 cup of the cheese, Vegetable Soup Mix, green onions, and the beaten egg. 8. Transfer mixture to a lightly buttered 1 1/2 quart baking dish. 9. Bake at 350F for 50 to 55 minutes or until potatoes are firm and top is lightly browned. 10. Sprinkle remaining 1/4 cup of cheese over casserole and bake for additional 5 minutes or until cheese is melted. 11. Let stand for 5 minutes to set before serving. |
