From my favorite cookbook: Busy Woman's Cookbook, by Sharon McFall. Only has 4 ingredients and is tasty and so easy to make. Can be thrown together at the last minute and is ready in 1 hour. Ingredients:
4 boneless skinless chicken breasts |
1 (10 3/4 ounce) can condensed cream of chicken soup (or mushroom) |
1 (8 ounce) carton plain yogurt |
8 ounces crushed seasoned stuffing mix (1 cup dry measurement) |
Directions:
1. Preheat oven to 350 degrees. 2. Spray baking dish with non-stick vegetable spray. 3. Place chicken breasts in dish. 4. Combine soup and yogurt and pour over chicken. 5. Sprinkle with crushed stuffing mix. 6. May add a little pepper if you like. There should be enough salt in the soup so you shouldn't have to add any. I don't add any - the yogurt is a little tangy so you'll have good flavor. 7. Bake in preheated oven, uncovered for about an hour or until chicken is done. (No pink in the middle). 8. That's it - just serve it right out of the dish. |
