This is a great start to a meal, good enough for company. It is low fat and very easy to put together quickly Ingredients:
1 tsp olive oil |
1 medium onion, chopped |
2 cloves garlic, chopped |
1 1/2 lbs fresh asparagus (about 3-4 cups cut up) |
2 vegetable bouillion (or chicken) cubes |
1/4 tsp salt |
1/8 tsp pepper |
water |
Directions:
1. Heat olive oil in a saucepan. 2. Add onion and garlic and cook until limp, about 5 minutes. 3. Wash asparagus, break off woody stems, and cut into 1-inch pieces, RESERVING TIPS. 4. Put tips in a small saucepan and cover with water. 5. Cook briefly, until just tender, drain and put aside. 6. Put stems in saucepan with onion and garlic. 7. Add water just to barely cover. 8. Add vegetable bouillon, salt and pepper. 9. Cook until tender- 10-15 mins. 10. When vegs are cooked, pour them (with liquid) into blender and blend until liquified. 11. Return to saucepan. Add asparagus tips. |
