Creamy Asparagus Casserole |

A wonderful side dish to serve with any meat. I created it for Easter; served with ham and potatoes. I could eat it as a main dish it was so good! Ingredients:
1 lb.asparagus |
3 tbs butter |
3 tbs flour |
1 small onion finely minced |
3 cups milk |
1 1/2 - 2 cups swiss cheese |
1/2 cup sour cream |
2 hard boiled eggs |
2 tsp. kosher salt |
1/2 tsp. black pepper |
1/4 tsp. dried thyme |
1/4 tsp. dried tarragon |
6 saltine crackers |
parmesan cheese |
Directions:
1. Cut asparagus into 2-3 inch lengths and blanche. 2. Saute onion in butter until transluscent. 3. Add flour to make a rue. Cooking for 2 - 3 minutes. 4. Slowly add milk, stirring constantly. 5. Cook until it starts thickening. 6. Add cheese, salt, pepper, thyme and tarragon. 7. If cheese sauce seems too thick add some more milk. 8. If too thin, cook a bit longer. 9. Remove from heat and stir in sour cream. 10. Place asparagus in a greased 9 x 9 baking dish. 11. Layer sliced eggs on top and pour cheese sauce over all. 12. Cover with aluminum foil and place in a 375 degree oven. 13. Bake covered for 30 minutes. 14. Remove foil and crumble crackers on top. 15. Sprinkle with parmesan cheese. 16. Bake additional 10 minutes or until top is browned a bit. |
