Healthy veggies and yogurt make this super fast side dish the star of the table. It will be enjoyed by everyone, especially the cook. Ingredients:
1/2 cup finely chopped onion |
1/2 cup (1 stick) butter |
2 packages (10 ounces each) frozen chopped spinach, thawed and squeezed dry |
1 can (14 ounces) artichoke hearts, drained and quartered |
1-1/2 cups plain yogurt |
1/2 cup (2 ounces) grated wisconsin parmesan cheese |
1/2 teaspoon salt |
1/4 teaspoon black pepper |
Directions:
1. In medium skillet, sauté onion in butter until tender; add remaining ingredients. 2. Mix together; spread in 1-1/2-quart casserole. 3. Bake at 350°F 25 minutes. |
