This refreshing combination of apples, nuts, and celery coated with a creamy dressing is reminiscent of Waldorf Salad. In this version, marshmallows add a sweet surprise to each bite. Ingredients:
1 granny smith apple, cored and chopped (about 1 3/4 cups) |
1 gala apple, cored and chopped (about 1 1/4 cups) |
1 teaspoon lemon juice |
1/2 cup small marshmallows |
1/3 cup chopped walnuts, toasted |
1/3 cup raisins |
1/4 cup chopped celery |
1/4 teaspoon salt |
1/3 cup reduced-calorie salad dressing (such as miracle whip light) |
1 tablespoon reduced-fat sour cream |
Directions:
1. Combine all ingredients in a bowl. Cover and chill at least 3 hours. |
