Creamy Apple Noodle Kugel |

Easy to make, somewhat sweet ,and can be served as a side dish. It gets its lightly sweet flavor from caramelized apples. Ingredients:
3/4 cup unsalted butter, melted |
12 ounces medium noodles, cooked |
4 large eggs |
1 1/2 cups sour cream, at room temperature |
1/2 cup sugar |
1 (8 ounce) pkge. cream cheese, at room temperature softened |
1/2 teaspoon cinnamon |
1/4 teaspoon nutmeg |
2 large apples, peeled, cored, sliced (about 3 cups) |
1/4 cup golden raisin (optional) |
Directions:
1. Put eggs and sour cream into a bowl and mix on medium speed until combined. 2. Mix in 1/2 cup sugar, 1/2 cup melted butter and the softened cream cheese. 3. Set aside. 4. Heat 2 tbsps. butter in a large skillet over medium heat. Stir in 2 tbsps. sugar, cinnamon and nutmeg. 5. Add apples.; gently toss to coat. 6. Cook, tossing occasionally, until soft, 8-10 minutes. 7. Stir apples and raisins into egg mixture; pour over noodles. 8. Toss gently to combine. 9. Pour into greased 9 X 13 inch baking dish. 10. Sprinkle with sugar and cinnamon. 11. Bake at 350 degress for 40 minutes or until golden brown. 12. Let cool for 15 minutes before serving. |
