Creamed Turnips With Their Greens |

When you can get your hands on young turnips with their greens, try this dish. It's a easy, elegant side dish, great with chicken or fish. Great to do in advance and just reheat. Ingredients:
1 bn young turnips with their greens |
1 tb butter |
s+p, nutmeg |
1/2 c heavy cream |
Directions:
1. If the turnips are very young, leave the skin on, otherwise peel them and cut into 1/2 inch cubes. Cut off the greens and wash them. Boil grens and turnip cubes in salted water for about 8 min., drain and let cool slightly. Squeeze the greens dry and roughly chop them. Heat the butter in a wide pan over medium heat, until it foams. Add turnips and greens and heat through. Add heavy cream and simmer for a couple minutes, until slightly reduced. Season with s+p and nutmeg. Serve at once. |
