This is very different, very creamy, very tasty and very impressive. Ingredients:
3 pounds medium turnips |
1 large onion chopped |
4 cups milk |
1/2 cup heavy cream |
3 tablespoons unsalted butter |
1 tablespoon fresh thyme leaves |
3/4 teaspoon salt |
6 black peppercorns |
6 whole cloves |
2 bay leaves |
3 tablespoons all purpose flour |
1 teaspoon white pepper |
1 teaspoon freshly grated nutmeg |
Directions:
1. Peel and quarter turnips. 2. In a large saucepan of boiling salted water cook turnips for 20 minutes then drain. 3. In a heavy saucepan bring milk and cream just to a simmer and keep hot over low heat. 4. In a heavy kettle cook onions in butter over medium low heat for one minute. 5. Add flour and cook 3 more minutes stirring as you cook. 6. Whisk in hot milk mixture and bring to boil over medium high heat whisking constantly. 7. Reduce heat to a simmer whisking occasionally for 15 minutes. 8. Pour sauce through a sieve into a large heavy saucepan and discard solids. 9. Stir into sauce white pepper nutmeg and salt to taste. 10. Return sauce to a simmer and add turnips. 11. Mash turnips with a potato masher. 12. Cook mixture covered over medium low heat for five minutes. 13. Serve with fresh ground pepper or parsley. |
