Looking to find something to do with a large package of frozen peas and looking at many recipes, this adaption was perfect and what we wanted! Fabulous side indeed! Ingredients:
1 large family size pkg of frozen sweet green peas ( 4 to 5 cups ) |
2 cups chicken broth or vegetable broth or water |
2/3 cup cream or half and half |
6 tbs butter or margarine |
4 tbs of cornstach or as needed |
1tbs sugar or splenda or to taste |
dash of nutmeg |
1 tbs fresh chopped chives |
salt and pepper to taste |
Directions:
1. Place frozen peas in a large pot. 2. Add the butter or margarine 3. Cover with liquid of choice. 4. Heat and stir over medium heat until mixture comes to a boil 5. Meanwhile dissolve the cornstarch and sugar in the cold cream 6. Then add to the hot peas anbd cook and stir over medium heat till thick ened 7. Remove from heat because once thick, do not overcook the peas or they change their bright bright green color 8. Stir in the chives and season to taste with salt, pepper and nutmeg |
