Another delicious sounding recipe from Renny Darlings' The Joy of Eating French Food . Sounds simple, yet elegant. The recipe states that the dish can be assembled earlier in the day and refrigerated. Ingredients:
2 (10 ounce) packages chopped spinach, defrosted and pressed in a strainer to drain |
2 (3 ounce) packages cream cheese with chives |
1/2 cup sour cream |
1 tablespoon flour |
1 tablespoon lemon juice |
1 cup swiss cheese, grated |
salt and pepper, to taste |
1/8 teaspoon nutmeg |
1/4 cup parmesan cheese, grated |
1/4 cup breadcrumbs |
2 tablespoons butter, melted |
Directions:
1. Combine spinach, cream cheese, sour cream, flour, lemon juice, swiss cheese and seasonings, and beat until blended. Place mixture into a buttered shallow porcelain baking dish. Combine crumbs, parmesan cheese and melted butter and sprinkle the crumbs over the top. Bake in a 350 degree oven for 25 minutes or until heated through. Run under the broiler for a few seconds to lightly brown. |
