I came up with this myself, but my husband and I love it! We eat it often. Since I made this by experimenting, feel free to make changes according to your taste! If your package sizes for the cream and spinach are a little different, don't fret. Mine are sometimes different and it always turns out well. Ingredients:
1 onion, finely chopped |
3 garlic cloves, minced |
2 tablespoons canola oil |
250 g soy cream or 250 g oat cream |
600 g frozen chopped spinach, partly or fully defrosted |
1 -2 pinch nutmeg |
1 teaspoon salt |
2 tablespoons nutritional yeast (optional) |
1/4 cup breadcrumbs |
fresh ground black pepper |
Directions:
1. Saute the onion and garlic in oil until tender. 2. Add cream, salt, and nutmeg. 3. Add spinach and mix well.*. 4. Add yeast if using. 5. Add beadcrumbs. 6. Simmer around 5 minutes. 7. Add pepper, stir and serve! 8. *I defrost the spinach at least partially in the microwave first. |
