Creamed Spinach Direct from Heaven |

Based on the recipe for Boston Market Creamed Spinach III from cdkitchen, this interpretation has more flavor, fewer calories, and only uses one pan total! In my book, that's a win three ways. Ingredients:
6 tablespoons butter |
1/4 cup all-purpose flour |
1/4 teaspoon kosher salt |
1 1/4 cups half-and-half |
6 ounces neufchatel cheese |
4 tablespoons onions, minced |
2 tablespoons garlic, minced |
30 ounces frozen chopped spinach, thawed |
1/4 cup water |
1/4 cup parmesan cheese, grated |
Directions:
1. In a saucepan over medium-high heat, saute onions and garlic in 4 tablespoons of butter until just softened. 2. Reduce heat to medium-low, melt remaining butter, and stir flour and salt into pan until creamed together. 3. Slowly stir in half and half, then cream cheese. 4. Increase heat to medium and whisk until mixture becomes thick and smooth. 5. Reduce heat to low and add spinach and water to pan. 6. Cover and cook, stirring occasionally, for 8 minutes. 7. Add Parmesan and stir until completely blended. Serve while still hot and watch it disappear! |
