Creamed Spinach Croques Monsieurs

Ingredients:
1 box(es) 10 frozen spinach chopped
4 slice(s) good quality white bread thick hand cut
1 tablespoon(s) dijon mustard
8 slice(s) thin mild ham
2 tablespoon(s) butter
2 tablespoon(s) flour
1 1/2 cup(s) whole milk
1 dash(es) salt and white pepper to taste
1/3 pound(s) gruyere cheese (about 1.5 cups) shredded
4 whole(s) large eggs
1 dash(es) fresh grated nutmeg to taste
Directions:
1. Preheat oven to 375 degrees.
2. Defrost spinach and wring out excess water. Spread out and separate spinach with fingers.
3. Arrange bread on baking sheet. Spread bread with mustard and top each with 2 slices ham.
4. Melt butter in saucepan over medium heat. Whisk in flour for 1 minute, then whish in milk; season with salt, pepper, and nutmeg.
5. Cook until sauce is thickened enought to coat a spoon, a couple of minutes. Add spinach.
6. Spoon sauce evenly over ham. Top spinach with and even layer of cheese and bake until brown, 10 minutes.
7. Cook eggs desired style and place one egg on each croque.
