I make creamed onions at the holidays but they are not something I am fond of... but with the addition of the bacon ........the recipe is from the Miller-Cory House Musesum, which is a furnished mid 18th century house in Westfield, NJ. Read more ... Ingredients:
16 medium onions |
1/2 lb bacon |
1/2 cup butter |
4 tbsp. flour |
2 cups milk |
salt and pepper to taste |

to make this dish faster and easier you can use the frozen pearl onions |

to make the cream sauce richer you can use part milk/ part half and half... personally i use all half and half when i make creamed onions |
Directions:
1. cook onions in slowly boiling water until tender...drain 2. fry bacon in a large frying pan until crisp 3. remove bacon and pour off the fat 4. melt butter in the frying pan....stir in the flour 5. stir in the milk until smooth...cook until thickened 6. add onions and the bacon to the cream sauce 7. season with salt and pepper |
