Ingredients:
1/2 cup butter or margarine |
1/2 cup all-purpose flour |
2 cups whipping cream |
2 cups chopped, cooked lobster |
1 medium-size green pepper, chopped |
1 whole pimiento, chopped |
1/2 teaspoon salt |
1/2 teaspoon white pepper |
toast baskets |
fresh parsley sprigs |
Directions:
1. Melt butter in a large heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Gradually add whipping cream; cook over medium heat, stirring constantly, until thickened and bubbly. Remove from heat. Fold in lobster, green pepper, pimiento, salt, and pepper. 2. Spoon 1/4 cup mixture into each basket. Garnish with parsley, and serve. |
