this is a creamy rice pudding with a hint of honey with a nutty crunch. Ingredients:
1.5 litres of milk (6 cups) |
1/4 cup (60 mls) honey |
3/4 cup (150g0 short grain rice |
1/4cup (35g0 dried currants |
1 tsp ground cardamon |
1 tbls of chopped unsalted cachews |
1tbls chopped unsalted pistachios toasted |
Directions:
1. combine milk and honey in a large pan stir over medium heat until honey is melted ; bring to the boil. 2. add rice, currants and cardamon to pan, simmer uncovered, 45 minutes or until rice is tender and mixture is thick, stirring occasionally. serve warm topped with nuts and drizzled with cream and a little extra honey |
