I made this today and it is very tasty. Enjoy. Ingredients:
4 ears corn |
4 slices thick sliced bacon |
1 large bunch scallions |
2/3 cup heavy cream |
1/4 cup water |
1 teaspoon fresh lemon juice |
1 tablespoon unsalted butter |
1 teaspoon freshly ground black pepper |
Directions:
1. Boil corn in boiling water and simmer 4 minutes. 2. Transfer corn to ice water to stop cooking. 3. Drain and cut kernels from cobs. 4. Cut bacon into 1/8” strips. 5. In a heavy skillet cook bacon over moderate heat stirring occasionally until browned and transfer to paper towels to drain. 6. In a heavy saucepan simmer cream, water and lemon juice with bacon, scallions and butter stirring 1 minute. 7. Add corn, salt and pepper and cook until liquid is slightly thickened. |
