Ingredients:
1-1/4 cup(s) all-purpose flour |
1 cup(s) corn meal |
1 tablespoon(s) baking powder |
1 teaspoon(s) salt |
1/2 cup(s) sugar |
1 cup(s) milk |
1/4 cup(s) vegetable oil |
2 eggs lightly beaten |
16 1/2 can(s) cream style corn |
Directions:
1. Preheat oven to 400*. Lightly coat 16 (2.5 ) muffin pan cups with cooking spray. Mix together first 5 ingredients in large bowl. Stir in milk, oil and eggs, mixing just until all ingredients are moistened. Stir in creamed corn. Pour batter into muffin cups, filling to brim. Bake 25 minutes untill puffed and toothpick comes out clean. Let cool 10 minutes before turning out. |
