Creamed Corn And Fava Beans |

A great twist on succotash. Ingredients:
2 cans fava beans, drained |
4 ears corn, shucked |
2 tbls butter |
4 shallots, minced |
1 clove garlic, minced |
1/2 cup heavy cream |
salt and black pepper to taste |
1/2 cup parsley, chopped |
Directions:
1. Break corn cobs in half 2. Stand each half on cutting board, flat end down, and slice off kernels with a sharp knife 3. In a small saucepan, melt 1 tbls. butter 4. Add shallots and saute until tender 5. Add garlic and cook for 1 minute 6. Add cream, increase heat, and bring to a simmer 7. Turn off heat and season with salt and pepper 8. In another pan, melt tbls. butter 9. Add corn and cook for a minute or 2 10. Add fava beans, cream and shallot mixture, and parsley 11. Bring to a simmer 12. Cook until cream has thickened slightly |
