Creamed Chicken on Cornbread |

Another recipe from my recipe tin. Have fixed for years. Ingredients:
1 cup yellow cornmeal |
1 cup flour |
4 teaspoons baking powder |
1/2 teaspoon salt |
1 egg |
1 cup milk |
1/4 cup shortening or 1/4 cup butter, melted |
2 teaspoons butter |
2 1/2 tablespoons flour |
1/4 teaspoon nutmeg |
1 teaspoon salt |
1/2 teaspoon pepper |
2 cups chicken broth |
1 cup milk |
3 cups cooked chicken, cubed |
Directions:
1. Instructions for cornbread: Preheat oven to 425F and grease an 8 square pan. 2. Mix cornmeal ingredients together until smooth. 3. Turn into prepared pan. 4. Bake 20 to 25 minutes, or until done. 5. For the chicken, melt butter in saucepan; combine with flour, nutmeg, salt & pepper. 6. Stir in broth; add milk & cook until thick. 7. Add chicken. 8. Serve over squares of corn bread. |
