These are really good as a side for chicken dishes. The recipe is easily doubled for feeding more than 2 people. Ingredients:
1 bag carrots |
1 tablespoon flour |
1 tablespoon butter |
1/2 cup milk |
salt to taste |
1/2-3/4 teaspoon paprika |
grated parmesan cheese to top |
parsley, chopped, for topping |
Directions:
1. Wash and peel carrots thoroughly. 2. In a pot, cover with water and boil until the carrots are tender when pierced with a fork. (25-30 minutes) 3. Drain and set aside. (Carrots may be cut into bite-size) 4. For the sauce,in a saucepan, melt butter, add the flour, salt and paprika. 5. Mix well. 6. Gradually add the milk and cook until sauce is creamy. It shouldn't boil though. 7. Cover carrots with sauce and sprinkle with parmesan cheese and some fresh parsley. |
