These cute little sandwich cookies are tender,buttery,melt-in-your-mouth. Great for the holiday. Ingredients:
1/2 c butter softened |
1 c flour |
3 tbs heavy whipping cream |
sugar |
filling |
1/4 c butter,softened |
3/4 c confectioners' sugar |
1/2 tsp vanilla |
1-1/2 to 2 tsp. heavy whipping cream |
1 drop each red and green food coloring |
Directions:
1. In small bowl,beat butter flour and cream. Cover,refrigerate 1 hour or till easy to handle. 2. On lightly floured surface,roll out dough to 1/8 thickness. Cut with a floured 1-1/4 round cookie cutter.Place 1 apart on ungreased baking sheets. Sprinkle with sugar. Prick each cookie 3 to 4 times with fork. 3. Bake at 375 degrees for 7 to 9 mins. or till set. Remove to racks to cool. 4. In small bowl,combine butter,confectioners' sugar,vanilla and enough cream to achieve desired consistancy. Remove 1/2 to another bowl;tint one portion of filling with red food coloring and the other with green. Carefull spread filling on bottom half of cookie;top with remaining cookies. |
