My mom would also make this for the Xmas Holidays. It's simple ingredients, good, and you'll LOVE IT! Ingredients:
wafers |
1 c. soft butter |
1/3 c. whipping cream |
2 c. flour |
creamy filling |
1/4 c. soft butter |
3/4 c. powdered sugar |
1 tsp. vanilla |
Directions:
1. Wafers: 2. Mix butter, cream and flour thoroughly. Chill for 1 hour. Roll 1/3 of the dough to 1/8 inch. Keep remaining dough chilled. Cut in 1 to 1 1/2 rounds. (I use an empty pill bottle) Coat both sides of the wafers with granulated sugar. Place on an ungreased cookie sheet. Prick each round with a fork about 4 times. Bake at 375° for 7 to 9 minutes or just until set but not brown. Cool. Put cookies together with creamy filling. 3. Creamy Filling: 4. Cream the butter, sugar and vanilla until smooth and fluffy. You can tint with food coloring if you desire. Place a small amount on each wafer and put wafers together to form a sandwich cookie. |
