I have not tried this recipe. I got it from Columbia's Second Century Cookbook. The recipe was submitted by Amy Brimmer. Ingredients:
1 cup water |
1/2 cup butter |
1 cup flour |
4 eggs |
2 cups milk |
8 ounces cream cheese |
3 ounces instant vanilla pudding |
1 ounce chocolate |
1 teaspoon butter |
1 cup confectioners' sugar |
2 teaspoons hot water |
Directions:
1. Puffs: Heat water and butter to a rolling boil. Stir in flour; stir over low heat for about 1 minute, until it forms a ball. Remove from stove. Beat in all eggs at once by hand and beat until smooth. Drop by scant 1/4 cup 3 inches apart on ungreased cookie sheet. Bake at 400 for 35 minutes until puffed and brown. Remove from oven. Cut in half and peel out inside (uncooked dough) and make room for filling. 2. Filling: Beat the milk, cream cheese, and vanilla for 1 minute. 3. Icing: Melt chocolate and butter in pot on stove. Remove from heat. Stir in confectioners sugar and hot water. Beat until smooth. Add more water if needed. |
