I have not tried this pie. I'm posting this for safe keeping. I found this recipe in From Babas' Kitchen To Ours. Ingredients:
1 1/2 cups milk |
1/4 cup sugar |
1/4 teaspoon salt |
3 tablespoons flour |
1 egg yolk |
1 tablespoon butter |
1/2 teaspoon vanilla |
1 (8 inch) pie crusts, baked (1 pastry shell) |
whipped cream |
Directions:
1. Scald 1 cup milk over boiling water. Mix sugar, salt, flour and remaining milk together. Stir into hot milk and cook slowly until thickened, stirring constantly. Cover and cook over boiling water for 5 minutes. Add mixture slowly to egg yolk and cook 1 minute longer. Add butter and vanilla. Cool. Pour into pastry shell and spread with whipped cream. 2. Variations: Any crumb pie shell may be used instead of baked pastry shell. For a 9-inch pie, use 2 cups milk and 3 egg yolks. 3. Banana Filling: Use 4 ripe bananas. Fill pastry shell with alternate layers of sliced bananas and cooled filling. 4. Chocolate Filling: Add 1ounce (1 square) melted chocolate and 2 tablespoon sugar into vanilla filling. 5. Coconut Filling: Stir 1 1/2 cups moist, shredded, coconut into vanilla filling. 6. Fruit Filling: Stir 1 1/2 cups drained, canned fruit salad and a few slices of banana into filling. |
