I used to have this every week at a cafeteria where I worked...Got this from the chef and still love if to this day. Ingredients:
1 large onion, diced |
1 pound ham, cubed |
1 cup carrots, finely diced |
1 stick butter (do not substitute) |
1 cup flour |
8 cups hot chicken broth |
2 cups cooked wild rice |
1 cup half-and-half |
salt and pepper to taste |
Directions:
1. In large soup pot, saute onion, ham and carrots in butter, until vegetables are tender 2. Add flour, stirring and cooking until flour is smooth 3. Slowly add broth, stirring until well mixed 4. Add rice and half-and-half and heat. 5. Do not bring to boil |
