This is a rich, hearty soup that tastes great on a cold winter day. Serve with crusty bread and a glass of wine! Ingredients:
2/3 cup wild rice |
1/2 cup onion, diced |
1/2 cup celery, diced |
1/2 cup carrot, diced |
3 -4 slices bacon, diced |
2 tablespoons butter |
4 1/2 cups chicken stock |
1/2 teaspoon thyme |
1 teaspoon crushed rosemary |
1 1/2 cups heavy cream |
1 tablespoon flour |
1 tablespoon butter |
Directions:
1. Saute rice, onion, celery, carrots and bacon in butter until crisp tender, 3-4 minutes; stir in stock and herbs, bring to a boil, reduce heat and cover; simmer until rice is tender,40-45 minutes. 2. Stir in cream. 3. Knead together the flour and butter for the beurre manie and whisk the mixture into the soup until soup thickens; season; add more stock if soup is too thick. 4. Serve hot. |
