Cream Of Vidalia Onion Soup |

This is a great soup for onion lovers. Can be served hot or cold. Ingredients:
6 slices hickory bacon, thinly sliced |
1 stick butter |
3 lbs. sweet onions, thinly sliced (6-8 onions) |
8 cloves garlic, chopped |
2 cups dry white wine |
4 cups chicken stock |
1 bay leaf |
1 tsp. dried thyme |
1 cup sour cream |
salt and pepper to taste |
hot pepper sauce to taste |
1/8 tsp. nutmeg |
croutons and chives to garnish |
Directions:
1. In Dutch oven, cook bacon until crisp 2. Remove bacon with slotted spoon to a paper towel leaving bacon grease in pan 3. Add butter, onions and garlic, cover and cook over low heat, 4. stirring until onions are tender and starting to caramelize 5. Add wine, stock, bay leaf and thyme 6. Bring to boil 7. Reduce heat and simmer 30 minutes 8. Remove bay leaf 9. Puree in a food processor or blender in batches 10. Season with salt, pepper, hot pepper sauce, and nutmeg 11. Add sour cream and combine 12. Garnish with bacon, croutons and chives 13. Can be served chilled too |
