One of our favorites on a cold day. I always fix a pan of cornbread with this soup. It is a real comfort food. Ingredients:
3 cups diced potatoes |
2 stakes of celery |
1 small onion |
1 cup water |
1 teaspoon salt |
1 teaspoon parsley flakes |
1/8 teaspoon pepper |
1 teaspoon instant chicken bullion granules |
2 cups milk |
3 tablespoons flour |
3 tablespoons butter |
Directions:
1. Combine potatoes, celery, onion, water, seasonings, and bullion in a 2 qt. saucepan. 2. Bring to a boil and cook covered for 13 to 16 minutes, or until potatoes are tender. 3. Combine 1/4 cup milk with flour until smooth. 4. Add flour mixture, remaining milk, and butter to potatoe mixture. 5. Cook over medium heat until mixture boils, stirring constantly. 6. If i have left over ham I will add it to soup. |
