Cream of Peanut Soup Ingredients:
1 tablespoon butter |
3 tablespoons peanut butter |
1 teaspoon onion, minced |
2 tablespoons flour |
2 cups milk, scalded |
1 cup chicken broth |
1 tablespoon milk, for dissolving the flour. |
Directions:
1. Cook onions in butter and peanut butter for 5 minutes. 2. Dissolve flour in 1 T milk. 3. Add to pan and stir until smooth. 4. Add scalded milk and chicken stock. 5. Season to taste. 6. Cook in double-boiler for 20 minutes. 7. Optional: top with chopped peanuts. |
