2 extra-large or 4 medium onions |
3 tablespoons unsalted butter |
1 tablespoon all-purpose flour |
1/2 teaspoon salt |
2 cups chicken stock |
1 cup milk |
1/2 cup heavy cream |
3 large egg yolks, lightly beaten |
1 1/2 teaspoons paprika |
fresh ground pepper, to taste |
3 drops hot red pepper sauce |
2 tablespoons parsley, chopped |
Directions:
1. Peel onions and slice very thin. 2. In a saucepan melt the butter. 3. Add onion. 4. Saute until golden, about 10 minutes. 5. Add flour and salt. 6. Gradually add chicken stock, stirring constantly. 7. Cover and simmer, over low heat, for about 10 minutes OR until onions are very tender. 8. Add milk and cream. 9. Take a little hot soup and, stirring constantly, the beaten egg yolks. 10. Add egg yolk mixture to the pot. 11. Continue heating over low heat until fully hot but NOT boiling. 12. Add paprika, pepper and pepper sauce. 13. Serve hot. 14. Garnish with chopped parsley, if desired. |
