Cream of Mushroom Soup

Ingredients:
2tbsp butter
275g button mushrooms
900ml chicken stock
1 onion
3tbsp plain flour
salt & pepper
2tbsp sherry (optional)
300ml whipping cream
Directions:
1. Wipe mushrooms and slice. Peel and dice onion.
2. In large saucepan, melt butter and saute onions and mushrooms for about 5 mins or until onions are soft
3. Sprinkle over flour. Add stock, a little at a time, stirring constantly. Cook, stirring until thickened.
4. Add cream and bring to boil, stirring. Add sherry if using and season.
