Soooo delicious - We just love those delicious fiddleheads when they come fresh in the spring, this is just one of the many recipes I have for fiddleheads!! Ingredients:
1/4 cup green onion, choped |
1/4 cup butter |
3 cups chicken broth |
1 1/2 cups cubed potatoes |
4 cups fiddleheads |
1/2 teaspoon salt |
1/4 teaspoon white pepper |
1 3/4 cups whole milk |
Directions:
1. Saute onions in butter 5 minutes. Stir in broth, potatoes, fiddleheads and seasoning. 2. Cover and simmer until potatoes are cooked. 3. Purée in blender. 4. Stir in milk. Serve hot. |
