Cream Of Curried Pea Soup |

A hearty winter soup! Ingredients:
2 c. frozen green peas |
2 med. onions diced |
2 carrots, diced |
2 stalks celery, sliced |
2 med. potatoes, cut into quarters |
2 garlic cloves |
2 t. curry powder |
4 c. vegetarian broth or chicken broth |
1 c. buttermilk |
Directions:
1. Heat 2 c. of the vegetarian broth in a large pot and bring to a 2. boil. 3. Add veggies and seasonings and cover. 4. Reduce the heat & simmer until veggie are tender - about 15 minutes. 5. Transfer to a food processor and puree. 6. Put back in the pot and add the remaining 2 c. of broth and 1 c. of buttermilk and stir well. 7. Add salt to taste and serve. |
