My mother in law gave me this recipe. For bean lovers. Ingredients:
1 15 oz. can chick peas, drained |
1 cup evaporated milk |
2 tbls. olive oil |
1/4 cup diced prosciutto or ham |
1/4 cup onion |
salt and pepper to taste |
grated parmesan cheese to top soup |
Directions:
1. Blend chick peas in blender until smooth. 2. Blend in evaporated milk 3. Heat olive oil in saute pan and add prosciutto and onion. Cook until onion is tender 4. Stir in chick pea mixture, salt and pepper, and heat through. 5. Top servings of soup with cheese. |
