A selection from the pages of grandma's Wartime Cookbook by Chef Ain't B's, this soup could serve as a meal with bread or as an ingredient in various recipes calling for cream soups. Ingredients:
3 cups celery |
2 cups boiling water |
1/2 teaspoon salt |
2 tablespoons all-purpose flour |
2 tablespoons fat (butter) |
2 cups milk |
1/4 teaspoon ground black pepper |
Directions:
1. Wash and scrape celery. 2. Cut into 1 pieces. 3. Place celery into a soup pot. 4. Add water and cook until celery is soft and tender. 5. Rub through a sieve (I'd use the blender or food processor) 6. Heat milk in double boiler. 7. Add milk to celery in the pot. 8. Melt fat, flour and pepper together. 9. Mix into soup. |
