cream of cauliflower soup Ingredients:
1 head cauliflower |
3 tbsp butter |
1 large onion |
1 clove garlic |
1/4 cup all-purpose flour |
4 cups chicken stock |
1 cup chicken stock |
1/2 cup whole milk |
1 egg yolk |
Directions:
1. wash and core cauliflower, chop into florets, reserve 12 tiny florets 2. large pot, heat butter, add onion, garlic, cook till soft 3. sprinkle flour over onions & stir. whisk in chicken stock. bring to simmer. season. add cauliflower and cook till fork-tender. 4. remove from pot and puree in blender. strain into clean pot. 5. medium heat, 1/4 cup milk. bring to a boil. 6. small bowl, remaining cream and egg yolk. whisk and then add to soup. add few sprinkles of nutmeg. Serve. |
