Super Foods Cookbook Ingredients:
1 large onion, sliced |
1 teaspoon canola oil |
2 cups chicken or 2 cups vegetable stock |
4 ounces carrots, sliced |
1 large potato, cubed |
1/2 teaspoon dried thyme |
3/4 cup milk |
Directions:
1. In a saucepan, sauté the onions in the oil until softened, about 5 minutes. 2. Add the stock, carrots, potatoes and thyme. 3. Simmer until tender, about 25 minutes. 4. Puree in a food mill or blender. 5. Stir in the milk. |
