Cream of Carrot Soup

Ingredients:
1 large onion, sliced
1 teaspoon canola oil
2 cups chicken or 2 cups vegetable stock
4 ounces carrots, sliced
1 large potato, cubed
1/2 teaspoon dried thyme
3/4 cup milk
Directions:
1. In a saucepan, sauté the onions in the oil until softened, about 5 minutes.
2. Add the stock, carrots, potatoes and thyme.
3. Simmer until tender, about 25 minutes.
4. Puree in a food mill or blender.
5. Stir in the milk.
