I found a recipe for Cream of Broccoli soup in a recipe book, but I just had to change it and make it my own, and came out with the best Cream of Broccoli soup ever. Enjoy!! Ingredients:
2 broccoli bunches washed and chopped into small chunks |
4 celery stalks washed and cut into small pieces |
1 large onion diced |
3 tbsp of butter |
1 1/2 cups of cream / milk ( your preference as to what kind you like to use, table, half and half, low fat ,2% milk etc..) |
3 tbsp of cornstarch |
1 cup of water (for cornstarch) |
water enough to cover vegetables in pot |
2 chicken bouillons |
salt |
pepper |
garlic seasoning |
1 potato (optional) |
Directions:
1. saute onions and celery with the 3 tbsp of butter for about 3 minutes or until tender 2. add salt ,pepper and garlic 3. add broccoli 4. fill with water just to cover over the broccoli 5. bring to a boil 6. add bouillons 7. turn down to low and simmer until broccoli is tender (about 15 minutes) 8. then add cream/ milk and cook for and extra 10 minutes on medium heat 9. mix cornstarch and 1 cup of water dissolve well and add to soup cook until it thickens just a few minutes 10. ****If you wish you can blend the broccoli with a hand blender right in the pot or in you blender or leave it chunky*****another suggestion is that you can omit the cornstarch and add a potato instead to the soup so when you blend it , it will get thick too. |
